Covering cultures

BIOVITEC covering cultures are used to treat the surface of natural or artificial casings.

BIOVITEC covering cultures have a real impact on the visual quality, flavour and stabilisation of the finished product by enabling :

· an attractive white colour to be generated

· a pleasant natural smell of mushrooms to be developed

· a real barrier against excessive crusting and drying to be formed
